Pepper seeds are where many of the plant’s natural defense compounds are concentrated—like lectins and certain bitter compounds. These can irritate the gut or immune system, especially for those following a sensitive or animal-based diet. We remove the seeds and use only the outer flesh of the peppers: the pericarp, exocarp, endocarp, and mesocarp—delivering flavor without compromise.
