Rendered tallow should be stored in a cool, dark place, preferably in an airtight container. When stored properly, it can last for several months at room temperature. For longer shelf life, tallow can be refrigerated or frozen, where it can last up to a year or more.

If you use this to cook daily, leave it out on your counter. If you want to keep this for more than just a few months, toss it in the fridge.
